Located in the village of Vitorchiano, in the heart of Lazio, the Trappist Monastery of Vitorchiano produces wines that reflect the spirit of simplicity, hard work, and respect for nature inherent in the Cistercian tradition. Cultivated on volcanic soils and vinified using organic and artisanal methods, their wines, including the renowned Coenobium, are the fruit of the labor of the 70 Trappist nuns of the monastery, guided by the oenologist GIAMPIERO BEA. Their vineyards cover approximately four hectares. Vinification is carried out naturally, without the addition of selected yeasts. This limited production is now recognized as one of the most authentic and unique expressions of Lazio's wines.
